Texas Coastal Bend tour guide Early Summer 2015 65 Taking on Mahi Mahi Part II Mahi Mahi Tostadas w Roasted Red Pepper Aioli What You Will Need Ingredients 2 6 oz. Mahi Mahi filets 4 corn or whole wheat tortillas 2 limes salt and black pepper shredded red cabbage handful of baby spinach leaves minced chives Roasted Red Pepper Aioli which the ambitious may make on their own while the rest of us will look in the gourmet sauces aisle What to Do Preheat oven to 350F Place the fish in a greased ovenproof dish and squeeze the juice of 12 of a lime over each then season with salt and pepper Cover with foil and bake at 350F until cooked through about 20 minutes depending on thickness of your fish During the last 5 minutes of cooking the fish place the tortillas on a baking sheet and bake until crisp. To serve place 1 tortilla on a dinner place and top with shred- ded cabbage and spinach. Next place chunks of the cooked fish on top drizzle with Roasted Red Pepper Aioli sauce and sprinkle with chives. Garnish each with lime slices.
